Akashi Single Malt 5 Year White Wine Cask is a limited Japanese single malt produced by Eigashima Shuzo at the Eigashima Distillery in Akashi, Hyōgo Prefecture. The best-documented edition, Single Cask No. 61191, was matured for three years in virgin American-oak Ariake casks and then for two additional years in a white-wine cask from Eigashima’s winery. Bottled at 106 proof without chill filtration or added coloring, it offers floral aromas, white fruit, citrus, vanilla and seasoned oak with a rounded, softly drying finish. Only 450 bottles were reportedly produced.
