Akashi Pure Malt – Toji’s Select is a Japanese pure malt whisky produced by Eigashima Shuzo at the Eigashima Distillery in Akashi, Hyōgo Prefecture. Made entirely from malted barley, the whisky is matured in sherry casks under the guidance of the distillery’s toji, or master sake brewer. Bottled at 92 proof, it combines floral and fruity aromas with raisin, caramel, chocolate, honeyed walnuts and citrus, followed by a long toffee finish.
