Akashi Single Malt 5 Year Sake Cask is a limited Japanese single malt produced by Eigashima Shuzo at the Eigashima Distillery in Akashi, Hyōgo Prefecture. It spends four years in ex-bourbon barrels before receiving an additional year of maturation in American oak casks previously used for Kijoushu, a concentrated and naturally sweet style of Japanese sake. Bottled at 100 proof, the sake-cask maturation adds a distinctive softness and sweetness to the whisky’s crisp malt character, producing notes of vanilla, white chocolate, almonds and subtle fruit.
